2010 Cabernet Sauvignon Wine

This robust and fruit forward Cabernet was grown in Penn Valley Vineyards of the Sierra Ft Hills. These hillside vines are facing south west and reside on rocky granit and loamy soil. The vineyard is aproximately 15 years old.

We admire the dedication the growers have towards vineyard management and to preserving the land. Drip irrigation is used sparingly to give the fruit more intensity and flavor.

Wine Profile

Tasting Notes This full bodied and balanced wine has a great burst of black currant with a full textured mid-pallet. 20 months in oak has given time for this wine to "come together" and provide a lingering espresso finish. Vineyard Notes Southwest facing rows on a small hillside up valley give just the right amount of cooling after sunny and warm days. Production Notes After a 3 day cold soak on whole clusters the grapes were gently destemmed with light crushing providing just enough juice to start fermentation which was done in small, open top 1 ton bins. We did 3 punchdowns per day for 10 days until about 1 brix when the wine was pressed off to barrel. We racked the wine twice during aging and light filtered at bottling. Food Pairing Notes Great with any steak, ribs, hearty pork dishes.
